A nutritious and colorful twist on traditional waffles, packed with beets and bananas, perfect for a healthy breakfast.

Ingredients

  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 1 cup mashed ripe bananas
  • 1 cup grated cooked beets
  • 2 eggs
  • 1 cup milk (dairy or non-dairy)
  • 2 tablespoons honey or maple syrup (optional)
  • Butter or oil for greasing the waffle iron

Instructions

  1. Mix dry ingredients: In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt until uniformly mixed.
  2. Blend wet ingredients: In another bowl, combine the mashed bananas, grated beets, eggs, milk, and honey or maple syrup (if using). Mix until smooth.
  3. Combine mixtures: Pour the wet mixture into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are okay.
  4. Prepare waffle iron: Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it with butter or oil.
  5. Cook the waffles: Pour the batter onto the heated waffle iron, using enough to cover the area without overflowing. Cook according to the manufacturer’s instructions until the waffles are golden brown and crisp.
  6. Serve immediately: Serve warm with your favorite toppings such as fresh fruit, syrup, or yogurt.

Notes

For a gluten-free option, substitute with almond flour. Fresh cooked beets can be replaced with canned beets in a pinch.
