A fun and festive twist on the classic deviled eggs, perfect for Halloween gatherings and themed parties.

Ingredients

  • 12 large eggs
  • 2 cups water (plus more for cooking)
  • 1 teaspoon white vinegar (for dye bath)
  • 1 teaspoon kosher salt (for dye bath)
  • 1 teaspoon black gel food coloring or 2 cups beet juice for red marbling
  • 0.33 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1 teaspoon Dijon mustard (yellow or spicy brown)
  • 1 teaspoon apple cider vinegar or lemon juice
  • 1 to 2 teaspoons sriracha or hot sauce (to taste)
  • 0.5 teaspoon smoked paprika (plus more to garnish)
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon fine salt
  • 0.125 teaspoon black pepper
  • 1 tablespoon dill pickles or relish (finely chopped, optional)
  • 18 to 24 large pitted black olives (for spiders)
  • Chives or parsley (finely chopped, for garnish, optional)

Instructions

  1. Prepare the Eggs: Place the eggs in a steamer basket over 1 inch of simmering water. Cover and steam for 12 minutes for large eggs.
  2. Transfer the eggs to an ice bath for 10 minutes to stop the cooking process and make peeling easier.
  3. Gently tap each cooled egg all over with the back of a spoon to create a network of cracks.
  4. In a bowl, combine 2 cups water, 1 teaspoon vinegar, 1 teaspoon salt, and 1 teaspoon black gel food coloring.
  5. Submerge the cracked eggs in the dye bath. Chill for 30 to 90 minutes.
  6. Rinse the dyed eggs under cold water, then carefully peel and pat them dry.
  7. Halve each egg lengthwise and gently remove the yolks into a mixing bowl.
  8. Mash the yolks with mayonnaise, Dijon mustard, apple cider vinegar, sriracha, smoked paprika, garlic powder, salt, and pepper until ultra-smooth.
  9. Spoon or pipe the filling back into the egg whites.
  10. For each spider decoration, cut one olive in half lengthwise to create the body and arrange slivers for legs.
