Enjoy vibrant, flavor-packed chicken fajitas with tender chicken, colorful bell peppers, and zesty seasoning that can be customized to your tastes.

Ingredients

  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 2 medium bell peppers (any color), sliced
  • 1 medium onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 8 small flour or corn tortillas
  • Optional garnishes: fresh cilantro, lime wedges, salsa, sour cream, or avocado

Instructions

  1. Prepare the chicken: In a mixing bowl, add the sliced chicken, olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper. Toss to coat the chicken evenly with the spices. Let it marinate for about 5 minutes while you prepare your vegetables.
  2. Cook the chicken: Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 4-6 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Aim for an internal temperature of 165°F.
  3. Add the vegetables: Once the chicken is cooked, add the sliced bell peppers and onion to the skillet. Sauté for another 5-7 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.
  4. Warm the tortillas: While the chicken and vegetables finish cooking, warm the tortillas in a dry skillet or microwave until pliable.
  5. Serve: Spoon the chicken and vegetable medley into the warm tortillas. Top with your choice of garnishes, roll up the tortillas, and enjoy your homemade chicken fajitas!

Notes

Cut chicken and vegetables uniformly for even cooking. Adjust seasoning as needed for personal preference.
