Chickpea Energy Balls are a delicious and nutritious snack, perfect for any time of day. These no-bake bites are easy to make and packed with protein.

Ingredients

  • 1 cup chickpeas (canned or cooked)
  • ¾ cup regular pitted dates
  • 2 tbsp raw cacao powder
  • 2 tbsp peanut butter
  • 1 pinch salt (optional)
  • 4 tbsp shredded coconut

Instructions

  1. Prepare the Ingredients: Gather all your ingredients. Rinse the chickpeas under cold water and drain them well. Pat dry before using to avoid excess moisture.
  2. Blend Everything Together: In a food processor, add the chickpeas, pitted dates, raw cacao powder, peanut butter, and salt (if using). Blend for about a minute until everything is well mixed. The mixture should be smooth and slightly sticky.
  3. Shape the Energy Balls: Scoop out about one full teaspoon of the mixture, and roll it into a ball between your palms. Continue with the remaining mixture until all the energy balls are formed.
  4. Add Coconut Coating: If desired, roll each ball in shredded coconut for an extra layer of flavor and texture. This step is optional, but it adds a nice touch.
  5. Enjoy or Chill: Enjoy immediately, or place the energy balls in the refrigerator for about 30 minutes to firm up, which makes them easier to eat.

Notes

Consider substituting peanut butter with sunflower seed butter for a nut-free option. Chilling helps with texture and flavor.
