Ingredients

  • 2 cups old-fashioned oats
  • ½ cup honey or maple syrup
  • ½ cup nut butter (almond, peanut, or cashew)
  • 1 cup mixed nuts (almonds, walnuts, or pecans)
  • ½ cup chocolate chips (semi-sweet or dark)
  • ½ cup seeds (optional: pumpkin, sunflower, or chia)
  • 1 cup dried fruit (optional: raisins, cranberries, or apricots)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix dry ingredients: In a large bowl, combine oats, chopped nuts, and seeds.
  3. Combine wet ingredients: In a separate bowl, stir together nut butter and honey (or maple syrup) until smooth.
  4. Combine mixtures: Pour the wet mixture over the dry ingredients, mixing well.
  5. Fold in chocolate and dried fruit, if using.
  6. Prepare the baking dish: Line an 8×8 inch dish with parchment paper.
  7. Spread the mixture into the prepared dish, pressing down firmly.
  8. Bake for 20-25 minutes until golden brown.
  9. Cool for 10 minutes, then cut into bars or squares.

Notes

Press the mixture down firmly to help the bars hold their shape. Store in an airtight container in the fridge for up to a week.
