Delicious low-carb meat pies with a flaky crust and savory seasoned filling.

Ingredients

  • 2½ cups (250 g) almond flour
  • ⅓ cup (40 g) coconut flour
  • ⅓ cup (75 g) melted butter
  • 2 large eggs
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 2 tablespoons apple cider vinegar (optional)
  • 1 lb (450 g) ground meat (beef, turkey, or chicken)
  • 1 small onion (about ½ cup, finely diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil or butter (for cooking)
  • ¾ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme or oregano
  • ¼ teaspoon chili flakes (optional)

Instructions

  1. Prepare the dough: In a large mixing bowl, combine the almond flour, coconut flour, salt, and baking powder. Add the melted butter and eggs, then mix until a soft, cohesive dough forms. If the dough feels sticky, cover it and refrigerate for 10–15 minutes.
  2. Cook the filling: Heat a skillet over medium heat. Add a tablespoon of oil or butter, then toss in the diced onion. Sauté until soft and translucent. Stir in the minced garlic and cook for another 20–30 seconds. Add the ground meat and seasonings, breaking it up as it cooks, until fully browned.
  3. Shape the dough: Divide it into equal portions. Roll each portion into a circle about ⅛ inch thick between two sheets of parchment paper.
  4. Fill the dough: Spoon a portion of the cooled meat filling into the center of each dough circle, leaving a border around the edges.
  5. Seal the pies: Gently fold the dough or place another rolled piece on top. Press the edges together to seal completely.
  6. Bake: Place the pies on a parchment-lined baking sheet and bake in a preheated 375°F (190°C) oven for 22–25 minutes, or until golden.
  7. Cool and serve: Remove from the oven and let them cool for 5–10 minutes before serving.

Notes

Use room temperature ingredients for better dough consistency. Store leftovers in an airtight container.
