Ingredients

  • 1 lb ground beef
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • Cooked rice or quinoa for serving
  • Green onions for garnish (optional)

Instructions

  1. Brown the beef in a large skillet over medium heat, breaking it apart. Drain excess fat.
  2. Make the sauce by whisking together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
  3. Pour the sauce over the cooked beef and stir well.
  4. Add mixed vegetables and cook for about 5-7 minutes until tender yet crisp.
  5. Serve over cooked rice or quinoa and garnish with green onions if desired.
  6. Store leftovers in meal prep containers for easy grab-and-go lunches.

Notes

For extra crunch, add vegetables towards the end of cooking. You can substitute soy sauce with tamari for a gluten-free option.
